Do not      drop fries into hot oil from more than 2 to 3 inches above the oil.

Purpose
  
The physical characteristics and chemical makeup of vegetable oils affect the flavor of foods cooked in the oils.  The smoke point of oil also determines how well it will hold up when deep-frying foods like French fries.  In this experiment, you will test three types of vegetable oil with homemade (fresh cut) or frozen French fries.

1000-mL graduated cylinder                          30 French fries
  
2-quart saucepan or small deep fryer             400-500 mL assigned oil
  
Thermometer                                                  paper towel
  
Slotted spoon or tongs
  
 
  
Procedure
  
Measure      400-500 mL of your assigned oil and pour it into a 2-quart saucepan or      deep fryer. Use three different oils.

Variation 1:  soybean oil
  
Variation 2:  corn oil
  
Variation 3:  canola oil
  
Variation 4:  peanut oil
  
Variation 5:  olive oil
  
Variation 6:  safflower or sunflower oil
  
Place      the saucepan on a range and heat the oil on medium-high heat until the      temperature reaches 190’C. If using a deep fryer, set the thermostat to      375’F.
Make      sure the French fries are similar in size.       When the oil has reached the appropriate temperature, add the      French fries to the oil all a once.
Cook      the fries for the time suggested on the package.  Shoestring fries take less time than      crinkle-cut or steak fries.  Stir      occasionally to keep the fries from sticking together.
Remove      the French fries with a slotted spoon or tongs to a paper towel.  Remove the oil from the heat.
Taste      one French fry cooked in each type of oil.       Record your observations in a data table.  Make sure to rinse your mouth with warm      water after tasting each French fry.
Dispose      of the cooled oil.  Clean all      equipment and your workstation with hot, soapy water.
